Ultrasonic Food Cutting
Ultrasonic food cutting is an advanced technology that
employs high-frequency vibrations—typically in the range of 20 kHz to 40 kHz,
which is beyond the threshold of human hearing—to enhance the precision and
efficiency of slicing food products. Unlike conventional cutting methods that
rely on applying force through a sharp blade, ultrasonic cutting uses a blade,
also known as a sonotrode, that vibrates at ultrasonic frequencies.
When the blade vibrates at these high frequencies, it
enables the cutting of food items with exceptional precision and minimal
resistance. The microscopic vibration of the blade significantly reduces
friction as it passes through the food, which not only results in cleaner cuts
but also helps prevent the blade from sticking to the product. This technology
is especially beneficial for delicate or sticky food products, as it ensures
that the slicing process is smooth and requires less force compared to
traditional knives.

How It Works
The system consists of a few key components:
Ultrasonic generator:
Converts electrical power into high-frequency signals.
Transducer:
Changes these signals into mechanical vibrations.
Booster/horn and blade (sonotrode): Amplifies vibrations and transfers them to a titanium or
stainless steel cutting blade.
Vibration: The blade moves thousands of times per second at
microscopic distances.
Friction
Reduction: Rapid vibration minimizes
friction, allowing smooth cuts.
Clean
Separation: Food is sliced cleanly
without deformation or smearing.
Unlike a traditional knife, which relies on sharpness and
downward force (often causing smearing, sticking, or deformation), the
ultrasonic blade reduces friction dramatically.
